Winemaking

The grape juice is obtained through a gentle pressing, and then ferments in stainless steel vats with controled temperature. All strains ferment separately. Once the perfect coupaje is done, it is stabilized and filtered for subsequent bottling.

Tasting notes

Young white wine, pale yellow, bright, with shades of green, clean and transparent. It is a wine of good intensity, fresh in nose with clear notes of apple, citrus, quince and white flowers. In mouth, it has a light and fresh entry, silky, without edges, with an aftertaste that reminds of those perceived in nose. A pleasant wine, round and very Mediterranean.

Xarel·lo, Chardonnay, Parellada and Macabeo

Winemaking

Alcoholic fermentation of Xarel·lo, Parellada and Macabeo are carried out separately in stainless steel tanks. Chardonnay is fermented in French oak barrels. Then the perfect cupaje is chosen and the selected yeasts are grown. The second fermentation takes place inside the bottle. Then it follows a minimum of 14 months of aging in a controlled environment. In the disgorgement no expedition liqueur is added.

Tasting notes

Sparkling wine with clear notes of crianza, exotic with great potential and complexity. The nose mixes tropical fruits like the banana, Mediterranean fruits like the apple and melon with a bottom note of small red fruits and toasted notes. The flavor is a central explosion reminiscent of the fruity complexity found in the nose, with a final hint of green almonds, long, fresh and with structure.

Winemaking

The vinification of each variety takes place separately. The cooling of the grapes takes up to 16 ° C for a cold pre-maceration. The barreling and maceration at 25 º C. Daily pumping and "délestage", out of the barrel within two weeks, soft pressing, controlled malolactic fermentation, aging in French and American oak during a minimum of six months, filtration and bottling, and final aging inside the bottle in the cellars until it reaches two years after the date of its circulation.

Tasting notes

A red cherry colored wine, with the aroma of soft cheese, with a touch of flower such as violet and dried fruits like raisins, figs and almonds. On the palate, a highly structured wine, harmonious and full-bodied that reminds us of the notes perceived in nose, with a long aftertaste and final note of bitter chocolate and a hint of roasted coffee. It is recommended to be decanted before serving.
